| 1 | box | raisin bran cereal | (15oz) |
| 3 | cups | sugar | |
| 5 | cups | flour, all-purpose | |
| 5 | teaspoons | baking soda | |
| 2 | teaspoons | salt | |
| 1 1/2 | teaspoons | cloves | |
| 2 | teaspoons | nutmeg | |
| 3 | teaspoons | cinnamon | |
| 4 | large | eggs | beaten |
| 1 | cup | vegetable oil | |
| 1 | quart | buttermilk | |
| 2 | teaspoons | vanilla extract | |
| 3 | packages | mixed dried fruit | |
| 2 | cups | walnuts | chopped |
| Additions | |||
| 12 | each | thai chile | finely minced |
| 2 | each | jalapeno peppers | fresh, sliced |
| 4 | each | habanero peppers | red - orange, sliced |
Use all fresh chiles! Mince them up real good.
Slice the jalapenos and habaneros into rings.
Mix the Thai chiles with the muffin ingredients below.
After spooning into muffin cups, place a slice of jalapeno or habanero on top of each muffin.
Simmer the fruit in water until very soft and they have absorbed all the juice they are going to (about 15-20 minutes).
Drain. Mix dry ingredients in a BIG bowl or pan.
Add remaining ingredients.
Mix well.
Spoon into muffin tins lined with paper cupcake papers about 2/3 full.
Bake at 400 degrees for 20 minutes -- if using miniature muffin tins, reduce baking time to 15 minutes.
(You would really be bonkers to try the miniature ones, it would make about 3 bezillion!) These really aren't hot, they just have a pleasant zing to them.

Everyone thinks the Christmas holidays is the only time period where you pack on pounds because of food. This statement may be true when you look at other holidays like Easter, St. Patrick’s Day and New Year’s Eve, but what about Thanksgiving?...
Restaurant quality. Great balance of flavors. A+ for ease of preperation. A nice surprise as I was very unsure how this recipe would turn out as I prepared it even though I thought the flavor combinations sounded good. Don't expect a flavor explosion rather a wonderful melding of flavors that compliment one another. Wonderful.
