This is classic chocolate ganache dressed up as fudge frosting, and it’s the move when you want bakery-level shine without buttercream’s sugary weight. Three ingredients, no thermometer, no fuss.

The technique is pure French pastry: hot cream poured over chopped chocolate, stirred until silky, then cooled until thick enough to spread. The 1:1 ratio of cream to chocolate by weight is what gives this its frosting consistency. Less cream and you’d have truffle filling, more cream and you’d have glaze.

The ice-bath cool-down is what separates spreadable frosting from a runny mess. Stirring over ice water drops the temperature fast and forces the cocoa butter to set up evenly. If you skip this and let it cool on the counter, it sets into a rock instead of a smooth, glossy frosting.

Use a real chopped baking chocolate bar, not chips. Chocolate chips contain stabilizers that resist melting cleanly and leave a grainy texture in the finished ganache.

Pro Tips

  • Don’t let the cream boil hard. A vigorous boil scalds the milk solids and changes the flavor. Pull it the instant you see bubbles around the edge.
  • Stir gently in small circles from the center outward. Whisking incorporates air bubbles that show up in the finished frosting.
  • If the ganache breaks (looks oily and grainy), whisk in a tablespoon of warm cream to bring it back together.
  • Apply while just slightly warm and pourable for a glossy poured glaze look, or wait until cool and thick for piping or thick spreading.

Variations

  • Add 2 tablespoons of bourbon, Grand Marnier, or espresso powder for grown-up depth.
  • Swap a third of the semi-sweet chocolate for milk chocolate for a sweeter, kid-friendly version.

Directions

Heat the heavy cream in a saucepan until just boiling.

Remove from the heat.

Add the semisweet chocolate and vanilla. Stir mixture until smooth and the chocolate is melted.

Transfer to a glass bowl. Place the glass bowl over ice water.

Stir until spreadable.
