Cornish Hen with Peaches

Ingredients

2 each cornish game hens
1 package rice mix, chicken flavored
1 x water
3 tablespoons butter or margarine
1 can peaches halves
2 tablespoons honey
1 tablespoon dry mustard
1/4 teaspoon curry powder
1 x paprika

Directions

Split hens, rinse and pat dry.

In a 7 x 11 baking dish, combine rhe rice mix with water and butter, according to amt on pkg.

Cook on HI about 1 min.

Stir in rice, cover and cook 2 mins.

Arrang hen halves, skin down, on top of rice, cover and cook on HI, 10 mins, turning often.

Drain peaches, reserving 2 T of juice.

Combine with 1 T butter, honey, dry mustard and curry powder in small bowl.

Cook ubncovered until bubbly, 45 secs.

Lift out hen halves, stir rice well,, and return to dish with skin sides up.

Brush skin well with honey mixture.

Cook 10 mins longer. Arrange peach halves around hens, brush with honey mixture, cook 45 seconds longer.

Sprinkle with paprika.

Stand covered 5 mins. For 1 hen, make appropriate changes in cooking time.
