These simple cinnamon drop cookies swap out sugar entirely for a granulated sugar replacement, keeping the sweetness without the spike.
The batter is egg-based and light, folded gently with flour, baking soda, and a good hit of cinnamon.
They bake up thin and crisp in about 10 minutes, more like a snickerdoodle’s leaner cousin.

- Beat the eggs and water until genuinely fluffy. Since there’s no butter or oil in this recipe, the whipped eggs provide all the structure and lift.
- Fold the dry ingredients in gently. Stirring too hard deflates the eggs and you’ll end up with flat, tough cookies.
- Space the dough 2 to 3 inches apart on the sheet. These spread as they bake.

Beat eggs and water until light and fluffy.
Beat in sugar replacement and cinnamon.
Cobine flour, baking soda and salt in siftfer; sift half the dry ingredients over egg mixture.
Fold to completely blend.
Repeat with remaining dry ingredients.
Drop by teaspoonfuls onto greased cookie sheets, 2 to 3 inches apart.
Bake at 375℉ (190℃). for 10 to 12 minutes.
