Chinese: Oriental Pistachio Chicken

Nothing is like a Chinese stir-fry when it comes to ‘Quick, Easy and Delicious"!

Directions
Season chicken breasts with garlic powder, paprika, salt and pepper.
Sauté chicken in oil over medium-high heat.
In saucepan, combine beef broth, cornstarch, wine and oyster sauce.
Heat to boiling and simmer for 10 minutes.
Add green onions and ¼ cup pistachios.
Prepare rice noodles according to package directions.
Place noodles on heated serving dish, top with chicken breasts and pour sauce over all.
Garnish with additional pistachios.

Sorry but those nuts in the picture are cashews.
Yes, I didn't have pistachio nuts on hand, so used cashews instead. Also added some red bell pepper and carrots to give some veggie boost. The best thing of stir-fry is that you can add whatever you have on hand, and it still tastes delicious. Happy Cooking :)
Also---8 chicken breasts seems WAY off! Should it be 8 OUNCES of chicken breast?
This recipe is 8 servings, so 8 chicken breasts are the right amount. 8 ounces chicken breast (1 chicken breast weights about 8 ounces) would be only 1/2 pound and enough for maybe 1 or 2 servings.
So it all depends on how much you are going to make, and it's very easy to scale down the recipe. Hope this helps :)
