Ingredients

1 1/2 cups rice flour
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon xanthan gum
1 1/4 cups water
3 tablespoons vegetable oil
2 tablespoons honey
2 each egg yolks beaten
2 large bananas mashed
1/2 cup walnuts chopped
2 each egg whites
1 x vegetable oil for frying

Directions

Combine flour, baking powder, salt and xanthan gum in medium bowl. Stir in water, oil, honey, egg yolks, banana and nuts. Beat egg whites in medium bowl until stiff peaks form. Fold into batter.

Pour batter onto hot oiled griddle or skillet; cook on both sides until golden brown.

Rubio's Fish Tacos

Spent 17 years in San Diego and have lived in ohio for the past 5. I've been craving Rubio's for the past year and just tried these tonight and they were fabulous. I also made a cream chipotle sauce that I prefer to the typical white sauce I like the added kick. I also found a salsa that is a dead on match for a smoky tasting salsa rubio's had, It was Frontera's roasted red pepper & garlic salsa with mellow red chile.
