40 minSoft, puffy, and glazed with a zippy orange icing. These are the cookies you bring to someone who thinks they don’t like oatmeal cookies.
Mashed ripe bananas and orange juice keep the dough moist, while rolled oats and a touch of nutmeg give each cookie a hearty, warmly spiced chew. Raisins scattered throughout add little bursts of sweetness.
Once cooled, a quick drizzle of orange juice and powdered sugar icing with fresh zest ties the whole citrus-banana thing together. They stay soft for days if you store them covered.
Chef Tips
- Drop by rounded teaspoonfuls, not tablespoons. These are meant to be small, soft bites
- Bake until just light golden brown. Overbaking turns “softies” into crunchies
- Make the icing thin enough to drizzle from a fork or spoon. It should set into a glossy streak, not a thick coat
- Let cookies cool completely before icing, or the glaze melts and soaks in instead of setting on top
Ingredients
Directions
Heat oven to 350℉ (180℃). Combine bananas, margarine and orange juice. Blend in eggs, vanilla and orange peel. Add combined dry ingredients and raisins; mix well.
Drop by rounded teaspoonfuls onto ungreased cookie sheet. Bake 20 to 22 minutes or until light golden brown. Cool 1 minute on cookie sheet; remove to wire rack. Drizzle icing over cooled cookies. Store tightly covered.
ORANGE ICING: Combine ¾ cup powdered sugar, 4 to 5 teaspoons orange juice and 1 teaspoon grated orange peel. Mix until smooth.
