| 1 | small | egg | beaten |
| 1 | x | lemon | juice and rind |
| 1 | pinch | nutmeg | |
| 1 | x | salt and black pepper | |
| 8 | each | herrings | cleaned |
| 300 | ml | apple cider | hard |
| 1 | each | bay leaf | well crumbled |
| 1 | x | black pepper | fresh ground |
Directions: First make the stuffing by mixing the breadcrumbs, parsley, beaten egg, lemon juice and peel, and salt and pepper.
Stuff the fish with the mixture. Lay in an ovenproof dish, close together; add the cider, crumbled bay leaf and salt and pepper.
Cover with foil and bake at 350F for about 35 minutes.

Very good, meat ended up very tender! I would suggest adding some more sauce about an hour before you take it out, besides that, it was very good.
