| 2 | each | bagels | plain, cut in half |
| 1 | each | sweet red bell pepper | |
| 2 | each | red onion | 1/2 inch thick slices |
| 1 | x | black pepper | |
| 1 | x | cream cheese (nonfat) | optional |
Cut red bell pepper lengthwise into four pieces, clean out, and place on piece of aluminum foil into toaster oven together with the onions.
At 400F bake for about 20 minutes, or until bell pepper is soft and skin bliste ring. Take out peppers and put bagel halfs into toaster oven. Remove skins from red peppers. By the time you are done, the bagels are toasted .
Arrange bagels open-faced on plate. Put onions on two of the halfs. Put a bit of cream cheese and 2 pieces of roasted bell peppers on the other two .
Sprinkle black pepper onto the bell peppers. Serve immediately.

I served this as a side dish with a coconut chicken curry and Thai spring rolls. It was an amazingly good salad. Everyone asked me for the recipe. I highly recommend it. (I did, however, substitute fresh cilantro for the watercress and I really think that made it.)
