A healthy alternative on a Mexican tortilla that is traditionally filled with cheese hence the meaning ‘little cheesy thing’. Our take is this – ‘little avocado thing’ which is full of goodness, full of fibre to ensure gut health, full of healthy fats which ensure that the carotenoid antioxidants are well absorbed into the body, full of vitamins and minerals that have many benefits – folate for cell function, potassium for heart health, Vitamin C for immune function to name a few. Buen provecho.
Here is a ‘grate’ side dish for the gluten-intolerant – or a way to get kids excited about vegetables. Packed with flavour and fibre, the mixture can be made in advance, and then simply portioned and fried for 6 minutes to glorious, crispy perfection. Don’t forget to drain off that excess oil once done, nobody wants a soggy, greasy latke..
When you’re looking for a simple, speedy and deliciously flavoursome dish, this recipe is the perfect solution. Chicken souvlakis are gorgeous Greek kebabs and these are made with chicken and a roasted pepper hummus. It’s a no-fuss chicken dish served with warm wheat tortillas that takes just 10 minutes from start to finish.
Hummus is such a simple thing to make that you could easily prepare it at home, and it also tastes much better than the shop bought options mainly due to the freshness of the ingredients. We’ve gone for a slightly different twist with this hummus dish and used split peas instead of chickpeas. It makes 6 coconut naans and a couple of pots full of delicious split pea hummus.
This orange glazed pork chop recipe is a meat lover’s dream and is perfectly complemented by the French beans and olive tapenade part of the recipe. These beans actually cater for 6 people, so feel free to use them in a simple stir fry the day after.
A vegetable cawl recipe specifically created for St. David’s Day which is celebrated every year on the 1st March, in remembrance of the patron saint of Wales. As the Welsh say, “Do the little things” and nourish your body. The recipe serves 6 bowls, as per the image, with 3 quenelles each.
Juicy chunks of caramelized pears can be found in every single bite, and it's made with whole wheat flour and 1% milk. A delicious and nutritious breakfast to start your day.
These delicious slow cooked fajitas are perfect for an evening with friends. We’ve used gram flour to make the tortillas which is sometimes referred to as chickpea flour and makes a tasty, healthy and gluten free alternative to your typical tortillas. You could also use buckwheat flour. When making the tortillas it’s important to make sure you only just cover the bottom of the pan with the mixture, otherwise you’ll end up making them too thick (a bit like pancakes) and they’re much easier to assemble when thin. We like using the slow cooker to make meals when we have a busy day ahead, as it’s super easy to pop everything in, turn on and eat as soon as work’s finished.
