A buttery oat crust topped with gooey melted caramel, a layer of melted chocolate chips, and crunchy pecans, then chilled and cut into bars. Turtle candy in bar form that takes just 30 minutes to make.

These bars are basically turtle candies that got a cookie crust upgrade. You’re welcome.

A quick oat and brown sugar crust bakes for just 5 minutes, then gets layered with smooth melted caramel, a river of melted semi-sweet chocolate, and a scattering of broken pecans on top.

Pop them in the fridge until everything sets, then cut into bars. The caramel stretches, the chocolate snaps, and the oat crust crumbles. Three textures, three layers, one very happy crowd.

Kitchen Tips

  • Melt the caramels in a double boiler and stir often so they stay smooth
  • Melt the chocolate chips in a plastic bag set in hot water for easy pouring and zero cleanup
  • Don’t overbake the crust; 5 minutes is enough to set it without making it too hard
  • Let the bars chill at least 15 minutes before cutting for the neatest slices

Directions

Preheat oven to 400℉ (200℃).

In a double boiler, cook caramels and milk, stirring occasionally until smooth.

Pour chocolate chips into a plastic bag and set in a pan of hot water to melt.

In a bowl, for the crust, mix together butter, flour, brown sugar and oats.

Stir and press into buttered 8 inch square glass dish.

Bake crust in the oven for about 5 minutes and then set aside.

When caramel is smooth, pour over crust and pour melting chocolate chips over caramel.

Sprinkle pecans on top.

Refrigerate until ready to eat, and cut into bars when ready to serve, about 15 minutes.
