Tomato Basil Soup
The Fraser High School restaurant serves my favorite tomato basil soup. I could eat this everyday!!! The recipe is for a large yield so I tried to make some changes.

2 cups carrots
2 cups celery
2 cups onion
1 Tbsp fresh garlic
2 Tbsp olive oil
1/4 c flour
1 qt chicken broth
1 can tomato sauce
1/2 tsp pepper
2 Tbsp chopped basil
1 bay leaf
1 Tbsp parsley
Any kind of pasta you like
Ingredients
2 cups carrots
2 cups celery
2 cups onion
1 Tbsp fresh garlic
2 Tbsp olive oil
1/4 c flour
1 qt chicken broth
1 can tomato sauce
1/2 tsp pepper
2 Tbsp chopped basil
1 bay leaf
1 Tbsp parsley
Any kind of pasta you like
Directions
- Sauté garlic, onions, carrots, celery (8-10 minutes)
- Add flour, blend well for 1 to 2 minutes
- Add chicken broth
- Add tomato sauce, pepper and bring to a boil. Simmer for 30 minutes.
- Add bay leaf, parsley, and basil, simmer for an additional 30 minutes.
- To finish, place soup in a blender so it is thick. :)
- Add pasta to soup before serving.
