Build your own soda fountain at home. This blueberry syrup is a fruit-forward concentrate you stir into sparkling water, about four ounces per liter, for a fizzy drink that tastes like real blueberries rather than artificial purple candy.

The method is simple: dissolve sugar in boiling water, then simmer the blueberries until they burst and bleed their color and flavor into the syrup. A pour of agave rounds out the sweetness, and a small stir of citric acid at the end delivers the bright, tangy snap that makes soda taste like soda instead of flat sweet juice. Add the citric acid off the heat so its zing stays sharp.

Strain through a fine mesh sieve and press hard on the solids to squeeze out every drop of color and juice. Bottle it, chill it, and it’s ready the moment a craving hits.

  • Press the strained berry pulp firmly. That’s where the deepest flavor and color hide.

Ingredients

20 oz water
16 oz sugar
4 oz Agave Sweetener
1 pt Blueberries
1/8 tsp (pinch) Citric Acid

Directions

Bring water to a boil. Add sugar - stir until dissolved. Add blueberries, simmering for 5 minutes (stirring continuously). Stir in Agave sweetener. Simmer 5 more minutes. Remove from heat. Stir in citric acid. Let cool about 10 to 15 minutes. Pour through wire mesh strainer. Squeeze out excess juices. Pour up into sealed container. Store in refrigerator for longer shelf life. Use 4oz per liter. Adjust to taste.
