Directions

Cut tips off asparagus and reserve for another use.

With a vegetable peeler, shave asparagus spears until you have shaved as much as you can – you will have little ends and pieces left over – just reserve them with the tips for some other use.

Add asparagus, olive oil, lemon juice and salt in medium bowl, toss until well mixed. Cover and keep it refrigerate for at least 40 minutes and up to 1½ hours.

Take it out. Mix in parmesan cheese. Season with more salt and black pepper to taste.

Divide among the plates, and grind some fresh black pepper on top. Serve right away.
