130 minNo oven, no stovetop, no stress. These no-bake bars are basically trail mix held together by peanut butter and honey, then frozen into sliceable squares.
Sesame seeds, sunflower seeds, chopped nuts, and coconut make up the crunchy base. The peanut butter and honey bind everything together while carob powder adds a chocolatey warmth without actual chocolate. A pinch of sea salt pulls all those flavors into focus.
Spread the mixture into a dish, freeze until firm, and cut into bars. They’re the kind of snack you keep stashed in the freezer for mid-afternoon energy crashes, post-workout refueling, or school lunchboxes that need something more interesting than a store-bought granola bar.
Kitchen Tips
- Warm the honey and peanut butter slightly (15 seconds in the microwave) before mixing. They’ll blend into the dry ingredients much more evenly when loosened up.
- Press the mixture firmly and evenly into the pan. Loose spots crumble when you slice. Use the back of a measuring cup or a piece of parchment to really pack it down.
- Keep them frozen. These soften fast at room temperature. Pull out only what you need and let them sit a few minutes before eating for the best texture.
