This holiday punch fills the whole house with the smell of cloves and warm rum during a Saturday afternoon simmer. A gallon of apple cider, apricot nectar, dark rum, and brown sugar bubble together in a Dutch oven with cinnamon sticks and clove-studded oranges floating on top.

The apricot nectar is the move here. Most wassail recipes lean heavy on cider alone, which can taste flat after an hour of simmering. The nectar adds a stone-fruit sweetness and silky body that lifts the whole pot, while the dark rum brings depth that white rum or just spices can’t deliver.

Pro Tips

  • Stud the oranges with cloves before the punch starts simmering. Push the whole cloves into the orange skin in concentric rings, which makes them pretty floating in the pot.

Directions

Combine cider, nectar, rum, brown sugar, lemon juice, and cinnamon sticks in a large Dutch oven.

Bring to a boil; reduce heat, and simmer, uncovered, 1 hour.

Stud oranges with cloves, and add to cider mixture.
