Directions
Take 1 cup besan for 2 ppl. add half cup of curd in it, and add half cup of water in it, mix it well and keep it for 4 to5 hours for fermentation.
After 4 to 5 hour add little pinch of turmeric, salt according to your taste, ¼ teaspoon sugar (it won't make ur dhokla sweet. It will only enhance the taste.), chopped green chillies, ginger paste and last add 1 whole pinch of eno (fruit salt Flavour Simple flavour).dis eno. It will ll make your batter fluffy....now your batter is ready...
Now boil water in idli maker. Grease your idlis tray n pour dat mixture on it, cover with lid steam it for 25 to 30 min.
For tadka: put oil in pan, heat it dn add mustard seeds in it dn green chillies (cut green chillies slit, long stripes I mean), add coriander and little bit water. very little and bring 1 or 2 boil and finally switch off d gas and spread dat mixture on your idlis dhokla with your steamed.
Serve with tamarind chutney or with coriander chutney.
