This is the homemade version of Bailey’s Irish Cream, and at a fraction of the cost of the bottled stuff. The blender does all the work in about 60 seconds, and the only specialty ingredient is Irish whiskey, though many bartenders swear that any blended whiskey works just as well in this format.

The sweetened condensed milk is doing double duty here. Its concentrated milk solids and sugar replicate the rich, viscous mouthfeel of commercial Irish cream, while the heavy cream contributes that velvety body. Together they create the unmistakable texture that makes this drink so easy to sip.

A word on the raw eggs: the alcohol content (1¾ cups of whiskey) is significant enough to inhibit bacterial growth, which is why traditional Irish cream recipes are safe to make and store. If you’re concerned about food safety, use pasteurized eggs from the carton.

The chocolate syrup and instant coffee are the flavor markers that distinguish Irish cream from a generic sweet liqueur. Don’t skip them. The coffee adds that subtle aromatic depth, and the chocolate provides the cocoa note that defines the genre.

Pro Tips

  • Use mid-range whiskey, not top-shelf. The other ingredients smooth out and round any rough edges, so expensive whiskey is wasted here.
  • Blend on low speed to avoid frothing the cream. You want smooth, not foamy.
  • Bottle in a clean, sterilized glass container with a tight seal. Mason jars work well.
  • Chill overnight before serving for the flavors to meld fully. The drink improves with time.

Variations

  • Swap the chocolate syrup for chocolate liqueur (Godiva or similar) for a richer chocolate version.
  • Add 1 teaspoon of almond extract for an almond-Irish cream hybrid.
  • Substitute decaf instant coffee if caffeine sensitivity is a concern; the flavor is virtually identical.
