Glazed Salmon Fillets

Ingredients

3 tbsp vegetable oil

3 tbsp balsamic vinegar
*
2 tbsp soy sauce, dark
*
2 tbsp black peppercorns
*
4 salmon fillets
Fresh

2 tbsp olive oil
*
4 scallions, spring or green onions
*

Directions

  1. Whisk together the vegetable oil, balsamic vinegar, soy sauce and crushed peppercorns. Pour the mixture over the salmon fillets, make sure they are completely coated and set aside to marinate for 30 minutes.
  2. Remove the salmon from the marinade. Heat the olive oil in a large frying pan until smoking then cook the salmon, skin side down, for 2 minutes. Turn the fish over, pour on the marinade and cook for 2 more minutes, basting with the cooking juices, or until the fish is just cooked through.
