Directions
Boil the butternut for 2 min, this will make the skin soft and easy to peel. Peel the butternut and slice into medium cubes or in wheels. heat the olive oil in a sauce pan, melt the butter and add the butternut. Fry until brown, remove and place on kitchen paper to remove the oil and butter. Warm the marmalade for a few seconds in a microwave just enough for it to work with. Add the vanilla essence to the marmalade and if you want add 30ml orange liqueur. Mix the sauce and pour over the butternut....serve.
