33 minA Southern potluck legend, and yes, the Coca-Cola is the secret. Boiling the cola with butter, oil, and cocoa, then pouring it hot over the flour and sugar, gives this cake an incredibly moist, fudgy crumb and a subtle caramel note you can’t quite place.
Buttermilk and a little baking soda do the lifting, keeping the dense, rich batter tender rather than heavy.
The frosting is the other half of the magic. You make a warm chocolate frosting on the stovetop and pour it over the cake while both are still warm, so it seeps into the surface and sets into a glossy, fudgy layer rather than sitting on top. It’s a sheet cake built for a crowd, gooey, deeply chocolatey, and even better the next day.
Pro Tips
- Pour the hot cola mixture over the dry ingredients as directed. The heat blooms the cocoa and helps create that signature moist crumb.
- Frost the cake while it’s still warm. The warm frosting soaks in and sets glossy instead of sitting on a cooled cake.
- Don’t overbake; pull it at 20 to 25 minutes so it stays moist and fudgy.
Variations
- Stir mini marshmallows or chopped pecans into the warm frosting for a classic Southern touch.
- Use Dr Pepper or root beer in place of the cola for a different flavor twist.
- Add a pinch of cinnamon or espresso powder to deepen the chocolate.
Ingredients
1 cup Coca Cola (real thing, not diet)
1/2 cup oil
1 stick butter
3 Tablespoon cocoa
2 cups sugar
2 cups flour
1/2 teaspoon salt
2 eggs
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla
Frosting:
1 stick butter
3 Tablespoon cocoa
6 Tablesppon of cream or milk
1 teaspoon vanilla extract
3 3/4 cups confectioner's sugar
Directions
In a saucepan, mix Coca Cola, oil, butter and cocoa and bring to a boil. In another bowl, combine the sugar, flour and salt. Pour the boiling Cola mixture over the flour mixture and beat well. Add the eggs, buttermilk, soda and vanilla and beat well. Pour mixture into a greased and floured 13 x 9 inch baking pan and bake at 350℉ (180℃) or 20 to 25 minutes. Remove pan. Cool for about 10 minutes before frosting.
Frosting: In a saucepan, combine the butter, cocoa, and milk. Heat until the butter melts. Beat in the remaining ingredients and spread on the cake while it’s still warm. Enjoy!
