135 minThese citrus cubes are the homemade answer to those wobbly orange jelly candies in cellophane wrappers, but built from actual grapefruit and orange juice instead of artificial flavor and food coloring. Just four tablespoons of unflavored gelatin and a few tablespoons of sugar are doing all the work.
The technique is dead simple but the proportions are key. The gelatin softens first in cold grapefruit juice (this prevents lumps), then boiling orange juice melts it completely and sets the structure as it chills. The orange extract amplifies the flavor so the cubes don’t taste muted.
This isn’t a sweet jelly candy. With only 2 tablespoons of sugar in the entire batch, the cubes lean tart and citrus-forward, more like a pate de fruits than a gummy bear. The grapefruit edge keeps things grown-up and refreshing, especially after a heavy meal.
Chopped walnuts on top add crunch and a slight bitter contrast that plays nicely with the bright citrus. Skip them if you want pure jelly squares.

Directions
Soften gelatin in grapefruit juice.
Add orange juice, orange extract and sugar.
Stir until dissolved.
Pour into 8 inch square pan.
Chill until partially set.
