Ingredients

2 pounds cheese
baker's or pot
3 large eggs
4 ounces raisins, seedless
otional
8 ounces sugar
1 tablespoon lemon zest
grated

Directions

Rub the cheese through a sieve.

Using the paddle attachment, cream the cheese and sugar until smooth.

Add eggs and lemon zest and mix in.

If desired, add in the raisins.

Ly, excellent!! I have to give this one a 5 star. Love how fluffy, golden and brown the pastry turns out, and the cheese filling definitely makes these pastries look more appealing and triples the deliciousness. The icing sugar adds another layer of yumminess. Just looking at these photos, I can feel my cravings are crawling back... Thanks for the beautiful photos :)
