Two layers of buttery Club crackers sandwich a stovetop filling of brown sugar, butter, milk, and shredded coconut, then the whole thing gets capped with a soft vanilla frosting. No oven required.
The filling is the heart of the recipe. Cooked over medium-high heat for 4 to 8 minutes, it thickens into a caramel-coconut layer that softens the crackers below and binds everything together. The buttery, slightly salty crackers are key, plain saltines won’t deliver the same rich base.
The simple powdered sugar frosting on top sets to a smooth, slightly crackly finish that makes these slice cleanly into perfect rectangles. Store them in a cool spot, slice into squares, and watch them disappear from the kitchen counter in record time.
Kitchen Tips
- Boil the filling exactly until it thickens enough to coat the back of a spoon. Underdone, the bars will be runny; overdone, they get hard and brittle as they cool.
- Lay out the bottom cracker layer in a single tight row with no gaps, otherwise the filling soaks through to the pan.
- Spread the frosting while the bars are still slightly warm. The frosting glides on smooth and self-levels into a perfect finish.
- Chill the bars for at least 30 minutes before slicing for clean square edges. A warm knife wiped between cuts helps too.

- Stir ½ cup chopped pecans or walnuts into the coconut filling for added crunch.

Ingredients
Directions
In a saucepan, add ¾ cups butter, brown sugar, milk and coconut flakes and place over medium-high heat.
Bring to a boil, reduce heat and simmer 4 to 8 minutes until it thickens.
Set aside to cool about 5 minutes.
Layer bottom of 9 x 13 inch pan with Keebler Club crackers.
Spread the above mixture over the Keebler Club crackers.
Place another layer of crackers over the mixture.
FROSTING:
Mix the frosting ingredients together (butter, water, powdered sugar and vanilla).
Spread the frosting evenly over the contents of the pan.
Store in cool place.
