Arroz Con Queso/Crockpot

Ingredients

1 1/2cup rice long-grain, converted
1cup tomatoes whole tomatoes, mashed (16 oz)
1cup beans mexican style (16 oz)
3each garlic cloves minced
1each onion finely chopped
2tablespoons vegetable oil
1cup cottage cheese
1cup green chili peppers drained (4-oz)
2cups monterey jack cheese grated

Directions

Mix thoroughly all ingredients except one cup of the grated cheese. Pour mixture into well-greased crockpot. Cover and cook on low setting for 6 to 9 hours. Just before serving, sprinkle with reserved grated cheese.

Makes 6 to 8 servings.

Picante Super Skillet Nachos

Excellent combination of Ingredients. Has great texture as finger food. Makes parties and social get togethers fun. Can be made as a "Fat-Free" dish. Just leave out the Avacado and use a Very Lean Ground Meat that has been drained and rinsed after cooking. Fat-Free ReFried Beans are easily found. An Excellent Cholesterol Free Dish also.
