Ingredients

1/4 cup flour, all-purpose
1/4 teaspoon salt
1 x black pepper
1/2 cup mayonnaise
2 cups milk
1/4 pound cheddar cheese american cheese, cubed
1/4 cup scallions, spring or green onions sliced
1/4 cup pimiento chopped
1 1/2 cup ham cooked, cubed
4 large eggs hard-boiled and sliced
4 each english muffins split, toasted conventionally

Directions

Blend flour, salt and pepper into mayonnaise; gradually add milk.

Heat, uncovered, in Microwave Oven until thickened 1 1/2 minutes; stir. Add cheese and heat, uncovered, in Microwave Oven until melted, approximately 1 1/2 more minutes.

Add onion, pimiento, ham and eggs. Heat, uncovered, in Microwave Oven 2 to 4 minutes or until heated through. Serve on muffins.

Well, it was a cold Sunday morning and I needed to get rid of some leftover baked ham. Whipped up this bad boy and it was GREAT! Just follow the instructions for mixing so you don't get lumpy (yuk) sauce. I found that my MEGA Panasonic nuke STILL took a lot longer than they said to heat the stuff up. Just remember to heat a bit; stir a bit, heat - stir, etc, and add the sliced eggs toward the end. Be VERY gentle with the sliced eggs and they won't completely fall apart. The taste is a delicate cheesey white sauce with a hint of the green onion that complements the other flavors. I liked it. It kept well in the fridge too.

Better Than Sex Cake (Ladies Only)

I made this back in the 70's and lost the recipe-Thank you so much for posting this particular one. It is absolutely heavenly. I used the no sugar fat free pudding-skim milk and lite cool whip. It was just perfect. Thanks again
