| 2 1/2 | cups | flour, unbleached all-purpose | |
| 1 1/2 | teaspoons | baking powder | |
| 3/4 | teaspoon | salt | |
| 1 1/4 | cups | sugar | divided |
| 3/4 | cup | vegetable oil | |
| 2 | large | eggs | |
| 1 | teaspoon | vanilla extract | |
| 1 1/2 | cups | chocolate chips | mint |
In medium bowl, combine flour, baking powder and salt; set aside.
In a large bowl, combine 1 cup sugar and vegetable oil; mix well.
Beat in eggs and vanilla extract.
Gradually beat in the flour mixture. Stir in Mint-Chocolate chips.
Shape into balls using rounded teaspoonfuls of dough; roll in remaining 1/4 cup of sugar.
Place on ungreased cookie sheets.
Bake at 350 degrees F. for 8 to 10 minutes. Cool completely on wire racks.
