| 1/2 | cup | vegetable oil | |
| 2 | teaspoons | vanilla extract | |
| 4 | ounces | chocolate unsweetened | unsweetened, melted |
| 2 | cups | flour, all-purpose | |
| 2 | teaspoons | baking powder | |
| 2 | cups | sugar | granulated |
| 1/2 | teaspoon | salt | |
| 4 | large | eggs | |
| 1 | cup | powdered sugar |
Mix oil, chocolate and granulated sugar.
Blend in 1 egg at a time until well mixed.
Add vanilla.
Stir flour, baking powder, and salt into oil mixture.
Chill several hours or overnight.
Heat oven to 350.
Drop teaspoonfuls of dough into confectioners' sugar.
Roll in sugar; shape into balls.
Place 2 inches apart on greased baking sheet.
Bake 10 to 12 minutes, or until almost no imprint remains when touched lightly in center.

We all know the Christmas morning routine. The parents get as much sleep as they can because they’re parents while the kids are up bright and early at about 6 a.m....
I baked these muffins and found them tasty and of course nutritional.
