| 1 | tablespoon | vegetable oil | |
| 1 | medium | onions | chopped |
| 2 | each | garlic cloves | crushed |
| 1 | cup | chicken | cooked, diced |
| 8 | ounces | corn | frozen |
| 2 | ounces | olives | black, sliced |
| 2/3 | ounces | green chili peppers | chopped |
| 1/4 | teaspoon | red pepper flakes | |
| 4 | large | sweet bell peppers | various colours if you wish |
| 1 | cup | cheese | jack, shredded |
Preheat oven to 350. Cook onions and garlic in oil until soft. Turn off heat; mix in chicken, corn, olives, chilies, and pepper flakes.
Remove tops from bell peppers, then slice in half lengthwise, remove seeds and membranes, and arrange around edge of casserole. Add cheese to chicken mixture and move immediately to casserole. Bake 45 minutes.
THIS IS A GREAT DISH AND VERY EASY TO COOK. IT'S VERY TASTY AND MY HOLE FAMILY LOVES IT.

I made this recipie twice during the holidays: once on Christmas Eve sans the dry wine and again on the day after Christmas with the dry wine. On each occasion my family, guests, and I were awed by this recipie's rich and flavorful taste! This was truly a hearty meal. My variations included the use of turkey sauage instead of chorizo and salt pork. Also, as special treat, I included in the Paella a pound of large sea scallops and employed as a side dish, a can of Goya Black Beans with chooped onions and green peppers. I have tried various Paella recipies in the past;however, this one was by far the best. The directions are very clear. I was a bit dissapointed in the short grain rice but this could be attributed to the fact that I am simply a "long grain rice person", if you will. I will make this again soon and I highly recommend that you do the same!
You will need a two-quart ice cream container to make this one-quart recipe. If you want a different dessert experience, look for a chocolate stout cake recipe to serve with this ice cream.
