| 1 | teaspoon | vanilla extract | |
| 1 1/2 | cups | vegetable oil | |
| 2 | cups | flour, all-purpose | |
| 1/2 | teaspoon | baking soda | |
| 1/4 | teaspoon | salt | |
| 1 | teaspoon | cinnamon | |
| 2 | teaspoons | baking powder | |
| 1 1/2 | cups | carrots | grated |
| 1 1/2 | cups | apple | chopped |
| 1 | cup | walnuts | chopped |
Combine sugar, eggs, vanilla, and oil.
Sift together dry ingredients and stir into liquid mixture.
Add carrots, apples and nuts. Pour batter into 9 x 13-inch pan and bake in 325~ oven for 60 to 70 minutes.
