Made these pumpkin-oatmeal bars a few days ago, and I enjoyed them, had the bars for my breakfast in the last a few days with a cup of milk or coffee. They were very moist and also crumbly, the toasted coconut flakes on top not only made these bars look more appealing but also added a layer of great texture and slight richness. I froze most of them, every night before I went to bed, took a few out and put in an air-tight container, then put in the frige, which gave the bars enough time to defrost by themselves. The next morning, I put them in a small toaster oven under 350 F for about 15 minutes. They were fresh like just out of the oven and the aroma in the house was so good.
