30 minThis stew hits like a cross between a stir-fry and a Thai-inspired peanut curry, and it comes together in just 30 minutes flat.
Onions, bell peppers, cabbage, carrots, broccoli, and cauliflower get stir-fried at screaming-hot heat until charred around the edges, then simmered in vegetable broth.
The spicy peanut sauce is where the magic lives: peanut butter, soy sauce, brown sugar, lemon juice, fresh ginger, garlic, and red pepper flakes all whisked together and stirred into the pot.
Top each bowl with chopped roasted peanuts and scallions for crunch and color.
Pro Tips
- Keep the heat high when stir-frying the onion and cabbage. You want browning, not steaming. If your pan is crowded, work in batches.
- Crush one garlic clove through a press for the sauce and chop the rest for cooking. The raw pressed garlic gives the sauce a sharper bite.
- Stir the peanut butter with a splash of warm broth before adding it to the stew. This prevents clumping and makes the sauce silky.
- Taste the sauce before adding it to the pot. Adjust the heat, sweetness, and acid to your liking.

Cut onion, bell peppers and cabbage into 1-inch squares.
Cut carrots on diagonal into thin slices.
Chop 3 cloves of garlic and crush remaining clove through press.
Cut green beans into 1½-inch pieces.
Combine soy sauce and brown sugar.
Heat oil in a large deep skillet.
Stir-fry onion over high heat for 2 to 3 minutes, until browned around the edges.
Add carrot, bell pepper, chopped garlic, ginger and pepper flakes and stir-fry 2 minutes.
Add cabbage and stir-fry until slightly wilted, 3 to 5 minutes.
Add broccoli, cauliflower, and 1½ cups of the broth.
Bring to a boil, cover and cook, stirring occasional, 5 to 7 minutes.
Menawhile, in a small bowl combine peanut butter, remaining broth, soy sauce mixture, lemon juice, sugar and crushed garlic.
Stir into stew and simmer uncovered, for 5 minutes.
Serve in chopped peanuts and scallions sprinkled on top.
