Mashed turnip and spiced apple slices layered in a casserole and baked under a buttery brown sugar bread crumb topping. This is an old-fashioned fall side dish that turns a humble root vegetable into something sweet, warm, and a little bit special.

The turnip gets boiled and mashed with butter, salt, and pepper first. The apples are tossed with brown sugar, cinnamon, and nutmeg before layering. As everything bakes together for nearly an hour, the apples soften into the mashed turnip and the bread crumb topping turns golden and crunchy.

The sweetness from the apples and brown sugar tames the natural bitterness of the turnip. If you’ve struggled to get people to eat turnips, this is the recipe that converts them.

Kitchen Tips

  • Mash the turnip smooth. Chunky mash doesn’t layer well and creates uneven pockets in the casserole.
  • Use a firm apple variety like Granny Smith or Honeycrisp. Soft apples turn to mush during the long bake.
  • End with a turnip layer on top, then add the bread crumb topping. This keeps the crumbs from getting buried and soggy.
  • The casserole is done when the topping is golden brown and you can see the edges bubbling.

Variations

  • Maple glaze: Drizzle 2 tablespoons of maple syrup over the top before adding the bread crumbs for a deeper sweetness.
  • Rutabaga swap: Use rutabaga (yellow turnip) for a milder, slightly sweeter version.
  • Savory twist: Skip the brown sugar in the turnip layer and add a pinch of white pepper and a grating of Gruyere cheese between layers.
