25 minThis tortellini with cream is Italian simplicity at its finest: butter melted into heavy cream, tossed with hot pasta and a generous shower of freshly grated Parmesan, finished with cracked black pepper. Five ingredients. Twenty-five minutes. Done.
The trick is tossing the hot, just-drained tortellini with the warm butter-cream mixture so the pasta absorbs some of the sauce as it cools slightly. That absorption is what gives every tortellini a silky, clingy coating instead of just sitting in a pool of cream.
Freshly grated Parmesan is non-negotiable here. Pre-shredded cheese has anti-caking agents that prevent it from melting smoothly, and in a sauce this simple, every ingredient has to pull its weight.
Chef Tips
- Heat the cream and butter together gently. Don’t boil the cream or it reduces too much and the sauce gets thick and pasty.
- Use a heated serving bowl. Cold ceramics cool the pasta fast and the cream solidifies into a waxy film.
- Toss twice: once with the cream, once after adding the cheese. This builds layers of flavor and ensures even coating.
- Be generous with the black pepper. It’s doing most of the seasoning work alongside the salty Parmesan.

Directions
Melt the butter in a medium-size saucepan; add the heavy cream and heat through.
Cook the tortellini in boiling salted water, then drain them and place them in a heated serving bowl.
Pour the cream-butter mixture over them and toss thoroughly so that some of the cream is absorbed.
Add ½ cup grated Parmesan cheese and a generous quantity of pepper, and toss again.
Pass additional cheese at table.
