Vegetarian sausage gets simmered in a fragrant broth with onions, scallions, red bell pepper, and sliced serrano chiles that bring a clean, bright heat. Bay leaves and lemon pepper round out the seasoning, keeping things aromatic without getting complicated.
Small pasta shells go in toward the end so they cook up tender right in the broth, and a cup of frozen peas at the finish adds a pop of green sweetness.
It’s one pot, one hour, and four generous bowls of warming comfort.
Kitchen Tips
- Add the pasta shells only in the last 7 to 9 minutes. Dropping them in too early turns them mushy and they’ll soak up all your broth
- Adjust the serrano heat to your liking. Leave the seeds in for serious kick, or remove them for a gentler warmth
- Frozen peas just need to be heated through, not cooked. Stir them in right at the end to keep their bright color and snap

Directions
In a large pot, combine veg broth, sausage, onion, green onion, bell pepper, bay leaves, lemon pepper, and serranos.
Simmer for 20 minutes.
Add pasta shells and simmer another 7 to 9 minutes, until cooked tender.
Add peas and heat to warm.
Ladle into bowls and serve.
