Thai Sweet Rice with Mangoes

Khao Niaow Ma Muang: steamed glutinous rice soaked in sweetened coconut milk and topped with ripe sliced mango. Thailand’s most beloved dessert, made from just 5 ingredients.

1 hrsIf you’ve only ever had mango sticky rice at a Thai restaurant, making it at home is going to be a revelation.
Glutinous rice soaks overnight, then steams for 45 minutes until chewy and tender.
While it cooks, coconut milk simmers down until rich and thick, then gets sweetened with sugar and a pinch of salt that makes every flavour pop.
Blend the warm rice with the coconut mixture, let it rest so the grains drink it all in, and top with slices of perfectly ripe mango.
Five ingredients. No oven. Pure tropical bliss.
Kitchen Tips
- Soak the glutinous rice for at least 6 hours or overnight; skipping this step means unevenly cooked, crunchy grains
- Watch the coconut milk carefully as it reduces; it can bubble up and spit in the final minutes so keep the heat low
- Use the ripest, most fragrant mangoes you can find; the sweetness of the fruit is what makes this dessert sing
- Serve at room temperature, not cold; chilling firms up the rice and dulls the coconut flavour

Cover rice with water and soak at least 6 hours or overnight.
A couple of hours or so before serving, drain rice and spread on a cheesecloth-lined section of a steamer; steam for 45 minutes.
During the steaming, sprinkle the rice 2 times with ¼ cup water.
Meanwhile, over medium heat using a Dutch oven or large saucepan, simmer the coconut milk on medium-low heat until it is reduced by one-third in volume.
Use caution toward the end of simmering, because the coconut milk can sen spouts of liquid 2 or 3 inches above the pan toward the end of the simmering time if it is too hot.
Remove from heat and stir in sugar and salt.
When rice is finished steaming and has rested for 10 minutes, blend it with the warm, sweetened coconut milk; allow to stand for 10 minutes.
Immediately arrange rice on platter and place mango on top.
Serve.
