25 minCall them wraps, call them burritos, call them whatever you want. These loaded tortilla sandwiches hit every note at once: smoky turkey, creamy avocado, sharp provolone, crunchy carrots, and fresh sprouts, all rolled up tight.
The secret weapon is the spread. Dijon mustard, mayonnaise, and a pinch of garlic powder get stirred together and slathered edge to edge across a warm tortilla before everything else goes in. It’s the glue that holds the whole symphony together.
Wrap them in foil and eat right away or stash them in the fridge for later. These travel like a dream and taste just as good cold.
Pro Tips
- Microwave each tortilla for 30 seconds before filling. A warm tortilla is pliable and won’t crack when you roll it. A cold one will split on you every time.
- Spread the mustard mixture all the way to the edges. It seals the tortilla when you fold and keeps everything from sliding out the back.
- Shred the carrots fresh rather than using pre-shredded bagged carrots. The texture is crunchier and juicier.

In a small dish, stir together the mustard, mayonnaise and garlic powder.
If using the avocado, cut it in half and twist to remove the seed.
Reserve one half for another use.
Cut the remaining half in half. Peel the skin away from the flesh.
Cut each piece into 4 slices and set aside.
Slice the unpeeled tomato and set aside.
Microwave the first tortilla for 30 seconds, uncovered, on high.
Spread half the mustard mixture over the entire tortilla surface.
In the center of the tortilla, leaving a ½-inch edge, place 2 slices of cheese and half each of the turkey, avocado (if using), tomato, carrots and sprouts.
Fold in the sides and roll it up burrito-style.
Repeat the process to make the second sandwich.
Cut the sandwiches in half and wrap each half in foil.
Serve at once or refrigerate until ready to serve.
