10 minThis traditional Indian yogurt drink blends plain yogurt with ice-cold water, lemon juice, and sugar into a frothy, cooling beverage that’s the best thing to reach for alongside spicy food. The yogurt’s natural tang, sharpened with a squeeze of lemon, balances the sweetness perfectly.
The crushed cumin seeds sprinkled on top are the finishing touch that makes this taste authentically Indian rather than like a simple smoothie. That warm, earthy spice floating on the cold, creamy surface hits your nose before you even take a sip.
Chef Tips
- Blend the yogurt with ice cubes first before adding sugar and lemon. Blending with ice creates that signature frothy, airy texture.
- Use full-fat plain yogurt for the creamiest, richest lassi. Low-fat works but tastes thinner.
- Crush the cumin seeds fresh just before sprinkling. Pre-ground cumin loses its aromatic punch quickly.
- Serve immediately over ice. Lassi separates and thins out as the ice melts, so drink it cold and fresh.
Variations
- Add half a ripe mango to the blender for a classic mango lassi.
- Swap sugar for a tablespoon of honey and add a pinch of cardamom for a more aromatic, traditional version.
- Make a savory lassi by skipping the sugar and adding extra cumin, a pinch of salt, and a few fresh mint leaves.
