This casserole is a sneaky-good weeknight dinner. Ground beef and baked beans get a twist with curry powder, dry mustard, and apple that turns a basic bean bake into something with real character. The sweet-savory combination is unexpected and it works.

Chopped apple goes into the bean mixture where it softens during baking and adds pockets of fruity sweetness that play off the curry and mustard. Sliced apple arranged on top stays slightly firmer, giving the finished casserole a visual layer and a bit of texture contrast on each serving.

Brown the beef and onion well and drain the fat before mixing with the beans. Excess grease makes the casserole oily and dulls the spice flavors. The curry powder and mustard need to be stirred in at the skillet stage so the heat blooms their flavor before everything goes into the casserole dish.

Directions

Heat the oven to 350℉ (180℃).

Cook and stir the meat and onion in a large skillet until the meat is brown.

Drain off the excess fat.

Stir in the chopped apple, the curry powder, mustard and the baked beans.

Turn into an ungreased 1½ quart casserole.

Arrange the apple slices on the top of the bean mixture and cover.

Bake until hot, about 25 to 30 minutes.
