Very simple, quick and easy recipe. Might even coax some non-tofu people to give it a try. The slices are coated with a gentle smoky spice mixture and cooked in a blackened Cajun style to a lightly crispy exterior then finished with a honey lemon glaze. Great color and great flavor to an otherwise humble protein. Try to find smoked paprika if you can or add a few drops of liquid smoke to the marinade.

Ingredients

4 tablespoons pine nuts
1 tablespoon paprika smoked
1 teaspoon cumin ground
1 teaspoon coriander ground
1 x kosher salt to taste
1 x black pepper freshly ground to taste
14 ounces tofu extra-firm, 1 package
1 tablespoon canola oil
2 tablespoons lemon juice
3 tablespoons water boiling
4 1/2 teaspoons honey

Directions

Toast pine nuts; set aside to let them cool.

Mix smoked paprika, ground cumin, ground coriander, salt and pepper in a flat plate.

Drain tofu and pat dry with paper towels.

Cut tofu crosswise into 8 slices, 1/2 inch thick.

Dredge the tofu liberally with the spice mixture, coating all sides.

Heat oil in a large nonstick skillet over medium-high heat; swirl to coat the bottom.

Add tofu and cook on one side until brown and crusty, 4 to 5 minutes; flip and cook for another 4 minutes.

Meanwhile Mix boiling water, lemon juice and honey in a small bowl.

Add the honey mixture to the tofu and shake to coat the tofu, about 3 minutes.

Serve hot, sprinkled with the toasted pine nuts.

I love cooking beancurt(tofu), if you cook it in a right way, you always feel satisfied, you can add any your favorite flavor into it, and with cooking they turn out tasty and lovely. This recipe is an excellent example.

Sausage-Apple Stuffed Squash

This was VERY good. I used 2 large buttercup squash instead. I also included a crumb topping combining 1/3 c. bread crumbs, 1/4 c. Parmesan and 1/4 c. shredded cheddar cheese. I then melted 3 TBS of butter and drizzled it over all. I would give five stars but end result was a bit dry, next time I make it I will try adding butter and brown sugar under meatballs.
