1 hrsThree ingredients. One skillet. The easiest meatloaf you’ll ever make.
Lean ground beef gets mixed with half a packet of onion soup mix dissolved in water, then shaped into a big round patty right in the skillet.
The rest of the soup mixture pours over the top and becomes a savory onion gravy as the meat cooks through.
Cut it into wedges like a pie, pile mashed potatoes on each slice, and ladle that pan gravy over everything.
It’s not gourmet. It’s Tuesday night, and it’s exactly what you need.
Kitchen Tips
- Don’t overmix the beef and soup mixture. A light hand keeps the meatloaf tender instead of dense and rubbery
- Shape the patty slightly smaller than your skillet so the liquid can pool around the edges and make gravy
- Cook covered over medium heat. The steam helps cook the thick patty evenly all the way through
- Use instant mashed potatoes to keep the whole meal in the “barely any effort” zone, or go homemade if you have the time
