Three-ingredient stovetop meatloaf made with ground beef and onion soup mix, cut into wedges and served with mashed potatoes and onion gravy. Dinner in 25 minutes flat.

Three ingredients. One skillet. The easiest meatloaf you’ll ever make.

Lean ground beef gets mixed with half a packet of onion soup mix dissolved in water, then shaped into a big round patty right in the skillet.

The rest of the soup mixture pours over the top and becomes a savory onion gravy as the meat cooks through.

Cut it into wedges like a pie, pile mashed potatoes on each slice, and ladle that pan gravy over everything.

It’s not gourmet. It’s Tuesday night, and it’s exactly what you need.

Kitchen Tips

  • Don’t overmix the beef and soup mixture. A light hand keeps the meatloaf tender instead of dense and rubbery
  • Shape the patty slightly smaller than your skillet so the liquid can pool around the edges and make gravy
  • Cook covered over medium heat. The steam helps cook the thick patty evenly all the way through
  • Use instant mashed potatoes to keep the whole meal in the “barely any effort” zone, or go homemade if you have the time

Directions

Place ground beef in large mixing bowl.

Combine onion soup mix and water.

Pour ½ cup soup mixture over ground beef; gently mix to blend.

Shape into an 8 inch round patty in large skillet.

Pour remaining soup mixture over top.

Cover an cook over medium heat for 25 minutes or until cooked to desired doneness.

Cut into 6 wedges.

Serve topped with mashed potatoes; spoon gravy over top.
