A thick, fudgy cocoa batter gets split in two. Half goes into the pan, then a single layer of chocolate mint patties gets arranged on top. The remaining batter blankets everything, and into the oven it goes.
Fifty minutes later, you’ve got dense, chocolatey brownies with a melted mint layer running through the middle that hits you with a cool burst of peppermint in every bite.
The recipe makes 36 squares, which means they’re built for bake sales, holiday cookie trays, and feeding a crowd.
Pro Tips
- Space the mint patties about half an inch apart so they melt and spread without running into each other and creating one solid minty sheet.
- Spread the top layer of batter gently with an offset spatula. The mint patties shift easily if you push too hard.
- Let the brownies cool completely in the pan before cutting. The mint layer needs time to firm back up or it’ll ooze when you slice.
- Use a full tablespoon of vanilla. It sounds like a lot, but it rounds out the cocoa and complements the mint beautifully.

Heat oven to 350℉ (180℃). Grease a 9 x 13 inch pan.
In a large bowl, with a spoon or wire whisk, stir together butter, sugar, and vanilla. add eggs; stir until well blended.
Stir in flour, cocoa, baking powder and salt. Blend well.
Reserve 2 cups of batter. spread remaining batter in the bottom of the baking pan.
Arrange mint patties in a single layer, about ½ inch apart, on the batter.
Spread reserved batter over the top.
Bake 50 to 55 minutes or until brownies start to pull from the edge of the pan.
Cool completely in the pan, on a wire rack.
Cut into squares. Makes about 36 brownies.
