Saucy Potatoes: frozen hash browns, stewed tomatoes, and Velveeta cooked in the microwave in 20 minutes flat. A simple 3-ingredient cheesy potato side dish that works for breakfast or dinner.

Three ingredients, one microwave-safe dish, and 20 minutes. Frozen hash browns go in with a can of undrained stewed tomatoes, cook on high until tender, then diced Velveeta melts in for the last four minutes.

The trick is keeping the tomatoes undrained. That liquid steams the potatoes from the inside out and keeps the whole dish from going dry. Stir once midway through each cooking stage and you’re done. This one earns its keep on busy weeknight dinner tables and lazy Sunday mornings equally.

Directions

Spray a 1½ quart microwave safe casserole dish.

Place potatoes and stewed tomatoes (undrained) in the dish and stir.

Microwave, covered, on high for about 6 to 8 minutes, stirring once during cooking.

Stir in velveeta, and continue cooking for another 4 minutes, stirring once.
