40 minRobusto chicken is the dump-and-go crockpot recipe that built its reputation on five ingredients and zero fuss. Chicken breasts go into the slow cooker with a bottle of Italian dressing in the morning, you come home seven hours later to chicken so tender it falls apart at the touch of a fork.
The dressing does triple duty: it tenderizes the chicken, seasons it as it cooks, and becomes the sauce. The vinegar in the dressing breaks down the chicken’s tough fibers slowly during the long, low cook, which is why even lean breast meat (notorious for going dry) stays juicy here.
The finishing move is what elevates this from one-note to genuinely satisfying. Sour cream stirred into the warm cooking liquid mellows the dressing’s sharpness; another scoop tossed with the egg noodles and freshly grated parmesan creates a creamy bed that catches every drop of sauce.
Use the original Seven Seas Robusto Italian if you can find it. Generic Italian dressing works but the Robusto has more body and a deeper herb profile.
Chef Tips
- Don’t lift the lid during cooking. Each peek loses heat and adds 15-20 minutes to the cook time.
- Cook the noodles right before serving so they’re hot and absorb the cream sauce properly.
- Always use freshly grated Parmesan, not the shaker can. The flavor difference is dramatic.
- Shred the chicken with two forks before serving for better sauce coverage on every bite.
Variations
- Stir in 4 ounces softened cream cheese with the sour cream for an even richer sauce.
- Add a tablespoon of dried Italian herbs or red pepper flakes to the crockpot for extra depth.
- Serve over rice or mashed potatoes instead of noodles for a different starch base.
