| 3 | each | baking potatoes | peeled |
| 1/4 | cup | chives | chopped |
| 1 | x | salt | |
| 1 | x | black pepper | freshly ground |
| 1/4 | cup | parsley leaves | chopped |
| 1 | x | vegetable oil | for frying |
| Garnish | |||
| 1/2 | cup | sour cream | |
| 2 | ounces | salmon caviar | |
| 1/4 | cup | chives | chopped |
Grate potatoes with grater or food processor.
Add chives, parsley, salt and pepper.
Do not soak potatoes or starch will be lost.
In a large skillet, heat a film of oil on high heat.
For each crisp, drop about 1 tb of potato mixture into oil and flatten.
Fry on one side until crisp, about 2 minutes.
Repeat on second side.
Drain on paper towel.
Repeat until all mixture is used up.
At serving time, either reheat cakes in 375 degrees F (190 degrees C) oven for 5 minutes or serve cold.
Garnish with sour cream, caviar and a sprinkling of chives.
Try these alternatives: Sour cream and apple sauce, sour cream and smoked salmon, olive paste or dab of anchovy paste.

The other day I hopped over to a well known pancake chain for a serious pig-out session. I ordered pancakes, an egg, sausage, hash browns, toast, coffee & OJ. Thirty-five minutes later when the food finally arrived, they forgot my toast, my OJ, and neve...
Super easy to make -- took less than five minutes to whip up in the food processor. I used my garlic press on the cloves though to ensure it would really be well blended, ie. no chunks.
