Crushed pineapple gets blended smooth with lemon juice, cinnamon, and optional orange extract, then set with unflavored gelatin into a molded dessert that’s light enough for a diabetic-friendly menu but flavorful enough that everyone at the table will want some.
Using unflavored gelatin instead of the usual boxed Jello means the sweetness comes entirely from the pineapple itself. No artificial colors, no corn syrup, no mystery ingredients. Just fruit and gelatin. The crushed pineapple with its juice provides all the liquid and flavor the mold needs.
The cinnamon is a small addition that makes a noticeable difference. It adds a warm, spiced note that deepens the pineapple flavor and keeps the dessert from tasting one-dimensional. The optional orange extract reinforces the tropical fruit character with a citrus lift.
Blending everything smooth before adding the dissolved gelatin creates an even, consistent texture throughout the mold. No lumpy fruit chunks sinking to the bottom.
Kitchen Tips
- Bloom the gelatin in cold water for the full 5 minutes before dissolving over hot water. Skipping this step means grainy, undissolved gelatin in the finished mold
- Make sure the gelatin is fully dissolved before adding to the blended mixture. Hold it up to the light. It should be completely clear with no visible granules
- Refrigerate for at least 4 hours for a firm set. Overnight is even better for easy unmolding
- To unmold cleanly, dip the bottom of the mold in warm water for 10 seconds, then invert onto a plate
Variations
- Use canned mandarin oranges instead of pineapple for a different citrus gelatin
- Add a layer of sliced fresh fruit in the bottom of the mold before pouring in the gelatin for a decorative effect
- Top with a dollop of sugar-free whipped topping and a sprinkle of cinnamon for a dressed-up presentation

Directions
Sprinkle gelatin over cold water in a small bowl and allow 5 minutes to soften.
Dissolve over hot water.
Mix remaining ingredients in blender until smooth.
Add gelatin mixture and whip until blended.
Pour into 3 cup mold and refrigerate until set.
Garnish with whipped topping.
