Picante de huevos is a Colombian tropical appetizer that looks as wild as it tastes. Hard-boiled eggs, creamy avocado, habanero chile, onion, parsley, and a splash of vinegar whirl together into a spiced egg salad that’s spooned into the hollows of halved ripe mangos.

The mango-and-egg combination is unexpected but brilliant. The sweet, perfumed mango cups cool the fire of the habanero while the rich avocado and egg play against the fruit’s bright acidity. Every bite delivers something different: sweet, fiery, creamy, herbal.

Chilled for a few hours so flavors meld, it makes an unforgettable first course for a summer dinner party or a starter on a Latin American-themed menu.

Chef Tips

  • Use truly ripe mangos, they should smell fragrant and yield slightly to a gentle squeeze. Under-ripe mango tastes starchy and fights the filling.
  • Wear gloves when handling the habanero, and taste as you go. One full chile is serious heat. Start with half and add more to taste.
  • Chill for at least 2 hours before serving. The flavors need time to come together, and cold sharpens the contrast with the warm fruit.
  • Avocado browns fast once chopped, add it to the processor last and plan to serve within a few hours of making.

Variations

  • Swap habanero for a milder Colombian aji or a seeded serrano for gentler heat.
  • Use fresh cilantro in place of parsley for a more tropical, coriander-forward flavor.
  • Serve in hollowed avocado halves or papaya halves instead of mango for a different sweet-savory pairing.

Directions

Place all the ingredients except the mangoes and cilantro in a food processor or blender and blend at medium speed until very well combined and fairly smooth.

Chill for several hours. Pour the sauce into the hollowed out section of the mango halves, and garnish with cilantro.
