18 minAsian-style marinated steak strips lean on five ingredients to do all the work: orange juice, soy sauce, dry sherry, fresh garlic, and ground ginger. The OJ does double duty here, both adding sweet citrus brightness and helping tenderize the meat thanks to its natural acidity. Soy brings savory umami salt; sherry contributes depth and a touch of nuttiness that pushes the marinade past typical takeout flavor.
A 2-to-3-hour marinade is the sweet spot for sirloin. Less than that and the flavors don’t penetrate; longer than that and the acid starts breaking down the surface texture into mush. Cooked over medium grill heat for under 10 minutes, the steaks come out medium-rare with caramelized edges from the sugars in the marinade.
Pro Tips
- Pat the steaks dry before grilling. Wet meat steams instead of searing and you lose the caramelized crust.
- Discard leftover marinade. The acid plus raw-meat residue makes it unsafe to brush on. If you want a sauce, reserve some before adding the steaks.
- Let the meat rest 5 minutes after grilling. Cutting too soon means juices run out onto the cutting board.
- Slice across the grain in thin strips for the most tender bite, especially with sirloin which can get chewy if cut wrong.
Variations
- Add a tablespoon of honey or maple syrup for a sweeter glaze and extra char on the grill.
- Sub flank or skirt steak for sirloin; both take marinade beautifully and slice thin the same way.
- Toss leftover sliced beef into a stir-fry or rice bowl with crisp veggies for a second meal.
