Dense fudge brownies made with melted unsweetened chocolate, chopped nuts, and a dash of cognac. Rich, intensely chocolatey, and done in 30 minutes.

Melted unsweetened chocolate stirred into melted margarine creates a deeply bitter chocolate base that the sugar then balances into something rich and intense. Unsweetened chocolate gives a more honest, darker cocoa flavor than semi-sweet would.
The batter uses metric measurements (grams for the margarine, chocolate, and nuts), which hints at European origins. A dash of cognac reinforces that. The alcohol burns off in the oven, but the warm, fruity depth it leaves behind gives these brownies a sophistication that vanilla alone can’t match.
Three eggs for this amount of batter provide structure and a slightly cakey lift in the center while the edges stay dense and chewy. Melt the margarine carefully then melt and stir the chocolate into it. Mix the other ingredients together, adding the eggs one at a time. Add half the chopped nuts in the mixture. Pour the mixture into a glass baking tray. Bake at 375℉ (190℃) for 25 to 30 minutes. It’s done when you stick a toothpick in and it comes out dry. Don’t overbake. Cut into squares while still hot but leave in tray.
