This is a complete one-dish dinner that earns its name by stacking protein, starch, and three different vegetables into a single bake. Ground turkey and tomatoes form the savory base, with diced potatoes, corn, lima beans, green pepper, and a generous topping of cheddar layered on top. No side dishes required.

The smart move in the directions is the order of operations. The turkey-tomato mixture goes in first, then the layered vegetables sit on top, then a final layer of cheese is added only for the last 30 minutes. This timing prevents the cheese from drying out while still letting the potatoes cook through fully under cover.

Flour sprinkled between the vegetable layers does double duty. It thickens the tomato juices into a proper gravy and absorbs steam released by the vegetables, keeping the casserole from going soupy. A modest ⅓ cup is all you need.

Kitchen Tips

  • Dice the potatoes small (about ½ inch) so they cook through in 45 minutes. Larger pieces stay hard.
  • Use canned tomatoes with their liquid as the directions specify. Draining them leaves the casserole too dry.
  • Cover tightly with foil for the first 45 minutes. The trapped steam is what cooks the potatoes evenly.
  • Let the finished casserole rest 10 minutes before serving. The juices redistribute and slicing portions becomes easier.

Variations

  • Swap ground turkey for ground beef or chicken depending on what’s in the freezer.
  • Use mixed frozen vegetables in place of the corn-lima-pepper combination for an even faster prep.
  • Top with a layer of crushed crackers or seasoned breadcrumbs along with the cheese for a crunchy finish.
